EAT LIKE A GREEK
This is a growing collection of my favorite Greek recipes. I learned to cook by watching and helping the women in my family prepare everyday meals or special feasts. My mother Maria was an intuitive cook that rarely followed a recipe to the letter, she always like to add her little twist in classic Greek dishes. I think I cook like her. My paternal grandmother Evgenia was born in Constantinople as Greeks still call the famous Byzantine megacity that is now known as Istanbul and belongs to Turkey. Grandma Evgenia's flavors were exquisite, her family gatherings were legendary. My maternal grandma Chrysoula was Cretan and cooked clean, lovely fragrant food according to the traditional Cretan cuisine. I loved watching her masterfully fold kaltsounia, little pies filled with greens and lightly fry them in extra virgin olive oil.
