2 leekshalved and sliced, whites and light green parts only

1handful dill roughly chopped
4tablespoonsextra virgin olive oil
1 eggbeaten for the egg wash
Instructions
Preheat the oven to 375 F. Line a baking sheet with parchment paper.
In a skillet heat 1 tbs olive oil. Add the leeks and saute for 1-2 min, until they are fragrant and soft. Make sure they don't get any color. Remove from heat and set aside.
In a large bowl add the feta, eggs dill, freshly ground pepper and 3 tbs olive oil. With a fork press down and break feta and mix everything together well.
Add the leeks to the cheese mixture. Gently mix everything well together.
Lay the pastry sheets flat on a clean, floured surface. Gently roll the sheets out to stretch slightly. Cut each sheet into 16 squares.
In each sheet, layer 1 tbsp of the cheese filling on 8 of the squares, leaving a 1/4 inch border around the edges. Lay the remaining 8 squares over the filling and seal the edges by crimping with the back of a fork.
Place the squares on the prepared baking sheet and brush the tops with beaten egg. Sprinkle with sesame all over. Transfer to the oven and bake for 20-25 minutes or until golden brown.
