Feta Cheese puff pastries with leeks & dill

These pastries can be a great appetizer that are gone within minutes an easy weeknight dinner.

  • Medium skillet
  • Rimmed baking sheet
  • Parchment paper


  • 3 sheets puff pastry thawed
  • 1.7 lbs Feta cheese
  • 2 leeks halved and sliced, whites and light green parts only
  • 2 eggs
  • 1 handful dill roughly chopped
  • 4 tablespoons extra virgin olive oil
  • 1 egg beaten for the egg wash


  • Preheat the oven to 375 F. Line a baking sheet with parchment paper. 
  • In a skillet heat 1 tbs olive oil. Add the leeks and saute for 1-2 min, until they are fragrant and soft. Make sure they don't get any color. Remove from heat and set aside.
  • In a large bowl add the feta, eggs dill, freshly ground pepper and 3 tbs olive oil. With a fork press down and break feta and mix everything together well.
  • Add the leeks to the cheese mixture. Gently mix everything well together.
  • Lay the pastry sheets flat on a clean, floured surface. Gently roll the sheets out to stretch slightly. Cut each sheet into 16 squares.
  • In each sheet, layer 1 tbsp of the cheese filling on 8 of the squares, leaving a ¼ inch border around the edges. Lay the remaining 8 squares over the filling and seal the edges by crimping with the back of a fork. 
  • Place the squares on the prepared baking sheet and brush the tops with beaten egg. Sprinkle with sesame all over. Transfer to the oven and bake for 20-25 minutes or until golden brown.
