2-3tablespoonsextra virgin olive oil plus more for drizzling
1teaspoonsugar
¼teaspoonsea salt
¼ teaspoonfreshly ground black pepper
1½cupfresh mozzarella(225 g), torn
4Greek pita breads
½teaspoondried oregano
1tablespoonfresh oregano leavesfor serving
Pinch of chili flakesfor serving
Instructions
Roast the tomatoes
Preheat the oven to 220°C / 425°F
In a baking pan, add the cherry tomatoes and garlic. Sprinkle one teaspoon of sugar all over and season with sea salt and freshly ground pepper. Add two to three tablespoons extra virgin olive oil and mix well.Bake for 25 minutes.
Make the mozzarella pitas
Place pita bread on a baking sheet lined with parchment paper.Top with plenty of fresh mozzarella, to your liking. Drizzle some olive oil and sprinkle a pinch of dried oregano.Bake for about 5 minutes, until the pita bread is lightly crisped around the edges, the mozzarella is melted and bubbly, and the moisture has evaporated.
Assemble and serve
Cut the pitas into four pieces and add 2-3 tomatoes to each piece, sprinkle some fresh oregano leaves and chili flakes on top, and serve immediately.
Notes
Roast the tomatoes whole; they'll burst on their own in the oven.
Leftover roasted tomatoes keep 3–4 days in the fridge or 3 months in the freezer. Always refrigerate them, since they're cooked with garlic in oil.
Feta, halloumi, or burrata can replace the mozzarella. Add burrata after baking.
