Here is what you need
- Potatoes. My go-to potatoes are Yukon Gold. Feel free to use your favorite baking potatoes.
- Greek sausages. Λουκάνικα. They are very similar to Italian sausages. They are usually made from pork. You can substitute with bratwurst, andouille, chorizo, kielbasa, etc.
- Red longhorn peppers. In Greece, they come from Florina and are very popular. Substitute with red bell peppers or piquillo peppers. As a different option, use green bell peppers for a bitter yet slightly sweet.
- Onions.
- Extra virgin olive oil.
- Lemons. I add the juice and throw the lemon cups in the pan for extra flavor.
- Chili flakes, sea salt, freshly ground pepper.
How to make this Greek sausage sheet pan dinner
- Preheat the oven to 220°C / 428°F.
- Cut the potatoes into wedges, peppers and onions into thick slices. Cut the sausages into large pieces.
- Spread the potatoes in a sheet pan, season them with sea salt, dried oregano and pepper and drizzle the olive oil all over them. Pour lemon juice from one lemon all over the potatoes.
- Bake for about 30 minutes or until potatoes are almost done.
- Add the sausage, sliced red peppers, and onions to the sheet pan. Toss all together.
- Pour more lemon juice and add some lemon wedges around if you like. Continue baking for another 20 minutes or until the potatoes are soft with golden edges and the sausages are fully cooked.
- Serve with a sprinkle of chili flakes and more lemon wedges to go around the table.
What to serve with this sheet pan dinner
This dish is easy to make and deserves fuss-free side dishes to go with it. A large green lettuce salad with a simple olive oil and vinegar dressing is perfect. Add some bread, olive oil for dipping, marinated olives and baked feta with honey and you are all set.
