1. Tzatziki
The classic everyone needs in their life
There is no Greek table without tzatziki. Creamy strained Greek yogurt, fresh cucumber, garlic, dill, and a generous drizzle of olive oil — it’s cool, tangy, and goes with absolutely everything. 3. Melitzanosalata — Greek Eggplant Dip
Smoky, earthy, and completely irresistible
This is Greece’s answer to baba ganoush — and honestly, I think it’s better. Eggplant is roasted until completely soft and smoky, then combined with olive oil, garlic, lemon, and fresh parsley into a silky, deeply flavored dip. Skordalia is one of Greece’s oldest dips — a thick, velvety blend of mashed potatoes, plenty of garlic, olive oil, and lemon juice. It’s rustic, punchy, and completely addictive. In Greece, it’s traditionally served on the 25th of March alongside salt cod (bakaliaros), and that combination is one of my all-time favorite meals.
