Why this recipe sings
Here is what you need
- Butter beans. For convenience and speed, I use two 14-oz cans of cooked butter beans. In Greece, we call them gigantes. If you prefer using dry beans, you calculate half the amount of the cooked beans, in this case 14-oz. Check out our recipe for gigantes beans with sausage.
- Onions and garlic.
- Carrots.
- Grape or cherry tomatoes.
- Lemons. The juice and zest brighten up the dish.
- Fresh parsley. For a fresh note. Substitute with fresh basil or oregano. Leave it out if fresh herbs are unavailable.
- Feta cheese. Crumbled Greek feta cheese elevates these beans to another level. It completes the dish and adds a lightly tangy layer of flavor.
- Extra virgin olive oil, sea salt and chili flakes for serving.
How to make the braised beans
Heat the olive oil in a skillet over medium heat. Saute the carrots with the onions and garlic for 3-4 minutes until the onions are fragrant.
Add the tomatoes, butter beans, sea salt, pepper, and about two cups of water, and cook on high heat for 20-25 minutes until they have developed a nice brothy sauce.
Add the lemon juice, zest and fresh parsley, mix and remove from the heat.
Serve the beans in bowls with crumbled feta and chopped fresh parsley. Sprinkle chili flakes on it for a light heat, drizzle olive oil, and add some extra lemon juice if you like.

- 1 tablespoon fresh parsley roughly chopped

- freshly ground pepper

- ยฝ cup feta crumbled
- fresh parsley roughly chopped
- chili flakes optional
